With clean lines, an earthy colour palette and dark timber accents, the rooms at Park Hyatt Sydney are pared-back and sophisticated. Restaurants and bars

From Friday to Sunday in the Living Room, executive sous chef Fuji Taukatelata has created an afternoon tea menu heroing local ingredients. Expect delicacies such as southern rock lobster rolls, yoghurt scones with strawberry gum jam and lemon myrtle meringue tarts, all served with Taittinger Champagne.

Just off the lobby you’ll find the Dining Room, the hotel’s intimate diner where you’ll start the day with a classic Australian-style breakfast – think ricotta pancakes with honey or soy-linseed toast with avocado, coriander and poached eggs. Order a flat white and enjoy sparkling harbour views from your table. 

Chef James Viles holds the reins in the elegant Dining Room, presiding over a menu of refined Australian cuisine with a focus on locally sourced produce. Take in the soaring sails of the Opera House over a leisurely a la carte lunch or go all-in with a Chef’s Table Experience that includes chicken skin with dashi cream and trout roe, Murray cod with smoked bone broth and clams, and doughnuts with rhubarb jam and buttermilk gelato. The hotel’s wine list has been carefully curated by head sommelier Erick Tuesta and was given three glasses at the 2023 Australia’s Wine List of the Year Awards. Meanwhile at The Bar they’ll gladly concoct one of Sydney’s best Martinis.

Travel for work

There are five plush spaces for hosting corporate events, each of them equipped with state-of-the-art technology, including iPad-controlled lighting and sound. A team of dedicated event managers will assist with organising your gathering, whether it be an intimate meeting or a business get-together.

Gym and spa

There’s a rooftop pool and a 24-hour gym on the third floor, plus miles of running and walking trails in close proximity to the hotel (hello, Royal Botanic Garden). But the most indulgent drawcard is The Spa, which works with La Mer, a skincare brand coveted across the world for its luxurious bio-fermented formulas and homegrown NSW Blue Mountain’s brand iKOU. The Spa offers exclusive treatments such as the 90-minute La Mer Hydrating Facial that infuses the skin with the brand’s famed Miracle Broth, plus 45-minute facials and 90-minute massage rituals incorporating iKOU’s Australian organic skincare.
