Lampredotto is peculiar to Florence and a true delicacy. Named for its resemblance to the lamprey fish that used to be plentiful in the River Arno, the sandwich is actually filled with tripe that’s been slow-cooked with herbs and tomato. Lampredotto stalls proliferate, especially around the entrance to San Lorenzo Market.
