Celebrated Sydney Chef Josh Niland is Opening His First International Restaurant in Singapore

What is it?

Seafood fans, break out your passports. One of Australia’s most lauded chefs, Josh Niland, has partnered with Edition Hotels to open his first international restaurant. The multi-award-winning restaurateur and cookbook author, who came to prominence in 2016 after opening his innovative low-to-no-waste seafood fine diner Saint Peter in Sydney’s Paddington, will helm the new Edition Singapore’s signature dining venue. Simply named Niland, it will be a sustainable seafood-focused “steakhouse”, where the beef cuts will be replaced with Niland’s trademark dry-aged fish. 

It’s a smart move by the Edition Hotels group to recruit a drawcard chef for its maiden Singapore property. The Lion City has one of the most vibrant food scenes in Asia, including 55 Michelin-starred restaurants, making it a popular destination for visiting gourmands. The Edition collection – the boutique wing of the Marriott group – now has 26 properties across the United States, Asia, Europe and the Middle East, with five new hotels (in Mexico’s Riviera Maya, Rome, Tokyo, Ginza and Singapore) opening in 2023.

Why you should care

Niland cut his culinary teeth in the kitchens of some of Sydney’s best restaurants as well as at the UK’s three-Michelin-starred The Fat Duck, before opening Saint Peter, his first restaurant, in Sydney. This was followed in 2018 by the Fish Butchery, a deli-style retail outlet selling sustainable seafood, also in Paddington, and then Charcoal Fish, Niland’s seafood spin on the rotisserie chicken shop in Rose Bay, and a second Fish Butchery in Waterloo, both in 2021. Heading north of the harbour for the first time, Niland opened his second fine diner, Petermen, earlier this year in St Leonards.

When you can go

An exact opening date is yet to be announced, but the Singapore Edition is set to welcome its first guests in November 2023. Niland’s à la carte menu will hero ingredients from locally sourced producers, growers and artisanal suppliers with fish cut to order, including rib on the bone, crown roasts and cutlets.
